1. Herb-Stuffed Turkey Breast

Step 1: Prepare the ingredients

  • 2 boneless and skinless turkey breasts
  • 1 tbsp olive oil
  • 1 cup flat-leaf parsley, chopped
  • 3 cloves garlic, finely chopped
  • 1 tbsp fresh sage, chopped
  • 1 tbsp lemon zest
  • Salt and pepper

Step 2: Preheat the oven
Before starting with the rest of the instructions, make sure to preheat the oven to 375. Afterward, place foil in a baking sheet and brush foil with oil.
Step 3: Prepare the herb mixture
Combine garlic, lemon zest, sage, parsley, and olive oil in a small bowl and stir. Add salt and pepper to taste, and set it aside.
Step 4: Prepare the turkey
Cut the turkey breast horizontally into two equal halves. Don’t cut all the way through; leave the other end attached.
Lay it open and put the herb mixture all over the surface of each side of the breast.
Then, roll the breast lengthwise starting at the side of the breast with the filling. Tie it together to prevent from falling apart, or secure with toothpicks.
Place on the baking sheet seam side down and brush the top with oil. Add salt and pepper accordingly.
Step 5: Bake the turkey
Bake the turkey in the preheated oven for about 40 to 50 minutes. See if the temperature reads 165.
If there is no thermometer, check by making sure that the meat doesn’t show pink flesh.
Step 6: Put it on a plate
After baking, slice the turkey diagonally and place it on a plate to serve!

2. Salt and Herb-Rubbed Turkey


Step 1: Prepare the ingredients

  • defrosted turkey breast
  • 1 tbsp fresh rosemary, chopped
  • 1 ½ tbsp fresh sage, chopped
  • 2 tbsp fresh thyme
  • 1/3 cup sea salt
  • 1 tsp pepper
  • 2 cups gluten-free broth (you may use pear juice as an alternative)

Step 2: Marinate the turkey
Start by preparing the mixture of rosemary, sage, thyme, salt, and pepper in a small bowl. Rub the mixture inside and outside of the turkey breast, and let it sit in the refrigerator for 8 to 24 hours.
Step 3: Roast the turkey
Remember to preheat the oven to 450 degrees before you begin roasting.
Remove the salt mixture from the turkey by rinsing it. Prepare the roasting pan and transfer the turkey in the roasting pan.
Then, add some broth/pear juice. Roast the turkey uncovered for 30 minutes at 450 degrees, and then remove it from the oven.
Lower the temperature of the oven to 325 degrees. Tent the turkey with foil before returning it to the oven.
Continue to bake the turkey according to the prescribed roasting time per weight.
Baste the turkey every 45 minutes to keep it moist. Remove the foil from the turkey again 30 minutes before the end time.
When the temperature reaches 165 degrees Fahrenheit, remove the turkey from the oven and get ready to serve.
Step 4: Serve!
After removing the turkey from the oven, replace the foil tent, and let it sit for 30 minutes. Then, place it in a serving plate and decorate as you wish.

3. BBQ Turkey Breast With Brown Sugar and BBQ Sauce

Step 1: Prepare the ingredients

  • 1 turkey breast (approximately 2 lbs)
  • 2 racks of back ribs
  • 1/4 tsp salt
  • 3 tbsp brown sugar
  • 2–3 tbsp chili powder
  • fresh ground pepper
  • BBQ sauce of choice

Step 2: Prepare the mixture
The brown sugar rub mixture includes salt, chili powder, brown sugar, and fresh ground pepper. Combine all ingredients in one small bowl then, set aside.
Step 3: Prepare turkey breast
To ease the bbq-ing, separate the fillet and the turkey breast. Rub the mixture on the surfaces of the turkey breast the fillet.
Rub generously to secure the flavor.
Step 4: BBQ
Start by preheating the bbq from a high, and later on, to a low or medium heat. Roast over the turkey on the low or medium heat for 10 minutes on each side or until the internal temperature reaches 165 degrees.
Before the end of the roasting, coat the top of the turkey with the bbq sauce of choice. When done, remove from the heat, and let it sit for a while before serving.
Step 5: Serve the BBQ turkey
Cut the turkey into 3/4 inch slices and serve on a plate. It’s best served with corn cobs and greeneries on the side.

4. Slow-Cooked Turkey Breasts with Cranberry Sauce

Step 1: Prepare the ingredients

  • 2 boneless and skinless turkey breast halves (2 pounds each)
  • 14 ounces jellied cranberry sauce
  • 1/2 cup + 2 tbsp water, divided
  • 1 envelope onion soup mix
  • 3 tbsp cornstarch

Step 2: Prepare the mixture
Mix 1/2 cup of water, cranberry juice, and soup mix in a mixing bowl. Pour half of the mixture all over the turkey.
Step 3: Cook the turkey breasts
Prepare a 5-quart slow cooker, and place the turkey breasts there.
Cook it covered for 4 to 6 hours at 165 degrees. Remove the turkey, and let it cool down.
While waiting, you can start making the sauce (see Step 4).
After the turkey has cooled down, shred the turkey breasts using 2 forks. Return it to the slow cooker to keep warm.
Step 4: Prepare the sauce
Transfer the remaining juice mixture and the leftover juice from the cooker into a large saucepan and bring the mixtures to a boil. Add cornstarch until it gradually thickens.
Add water as desired.
Step 5: Serve turkey breasts with the sauce
When the turkey is ready, put it on a serving plate. Add the cranberry sauce.

5. Turkey Lasagna

Step 1: Prepare the ingredients

  • 1 package thinly sliced deli turkey breast, chopped (10-ounce)
  • 2 tbsp vegetable oil
  • Cooking spray
  • 3/4 cup of green bell pepper, chopped
  • 1 1/4 of cups onion, chopped
  • 1 garlic clove, minced
  • 2 large eggs, lightly beaten
  • 8 cooked lasagna noodles
  • 1 tsp dried Italian seasoning
  • 1 bottle tomato-basil pasta sauce (26-ounce)

  • 1/4 cup of fresh Parmesan cheese, grated (1-ounce)
  • 1 carton cottage cheese, fat-free (16-ounce)

Step 2: Prepare the sauce
Before starting with the sauce, preheat the oven to 350 degrees.
Saute onion, bell pepper, mushrooms, and garlic in a large skillet at medium to high heat. Add the turkey and continue to cook for 10 minutes while stirring frequently.
Add the seasoning and sauce. Reduce heat to medium and stir occasionally for about 10 minutes more.
Step 3: Prepare the lasagna layers
Prepare the cheese mixture by combining parmesan cheese, salt, black pepper, eggs, and cottage cheese in a mixing bowl.
Coat a baking dish with cooking spray, and spread 1 cup of the turkey mixture as your first layer. Lay 4 noodles over the turkey mixture.
Top it with the parmesan mixture and 2 more cups of the turkey mixture. Repeat the layers and end with the turkey mixture.
Step 4: Bake!
Sprinkle mozzarella cheese on top of the layers and bake for 45 minutes at 350 degrees. After baking, let it cool for 15 minutes before serving.
