5 Easy Low-Carb Dinners That Are Perfect for Holiday Festivities
1. Creamy Herb-Filled Bacon Rolls
- 12 pieces of thick bacon
- 6 chives
- 1/2 cup cream cheese
- 3 Tbsp heavy whipping cream
- 2 large basil leaves
- 1 garlic clove
Step 1: Preheat the oven
Before proceeding with the next steps, make sure to preheat the oven to 375°F.
Step 2: Make the bacon rolls
Wrap the bacon around cannoli rods. Set aside.
Bake it for 25 minutes or until the bacon becomes crispy. Take it out from the oven once done and allow it to cool.
Slide the bacon off the cannoli rods. Set aside.
Step 3: Make the herb cream filling
To make the filling, put the garlic and herbs in a food processor. Pulse until minced.
Next, add the cream and cream cheese. Process until all ingredients are blended well.

- 1/2 kg trimmed and cooked green beans
- 151 g cooked and chopped bacon

- 4 Tbsp dry white wine
- 1 minced garlic clove
- 1 Tbsp minced parsley
- 2 Tbsp bacon drippings
- 6 Tbsp grated cheddar cheese
- 1 tsp lemon zest
- 1 1/2 tsp Dijon mustard
- 1/4 tsp pepper
- 3/4 cup softened cream cheese
- 1 tsp Worcestershire sauce
- 1/2 – 3/4 tsp salt
- 3/4 cup of unsalted chicken stock
- 1/3 cup of crushed pork rinds
- 1/8 tsp granulated garlic
- 1-2 tsp olive oil
- 1/8 tsp salt
Step 1: Preheat the oven
Preheat the oven to 350°F. Place the rack in the middle of the oven.
Brush an 8×8 casserole dish with butter.
Step 2: Cook the beans
Put two tablespoons of water in a microwavable bowl, then add the beans. Cover and steam for 4-5 minutes on high power.
Drain the green beans and transfer to a large bowl. Mix them up with the chopped bacon.
Step 3: Mince the herbs
Separately mince the parsley, onion, and garlic. Next, zest the lemon and set aside.
Step 4: Make the creamy cheese sauce
Heat a large non-stick skillet over high heat. Add the bacon drippings and minced onion.
Saute for 2-3 minutes or until translucent. Afterward, add the minced garlic and saute until soft.
Lower the heat to medium, then add the minced parsley, lemon zest, and wine. Saute for another minute.
Throw in the softened cream cheese, breaking it up in the pan. Gradually add the chicken broth and whisk until well-combined and the cream cheese has melted.
Turn the heat to low and allow the sauce to bubble. Add the Dijon mustard, Worcestershire sauce, cheddar cheese, salt, and pepper.
Whisk and adjust the seasoning according to your taste.
Step 5: Combine the sauce with the green beans
Pour the sauce into the bowl of bacon and green beans. Stir.
Once combined, transfer the green bean mixture to the buttered baking dish.
Step 6: Make the topping
Put the pork rinds in a plastic zip-lock bag and crush them with a rolling pin. Transfer the crumbs into a small bowl, then add the garlic and salt.

- 1/4 cup finely chopped cilantro
- 1/2 cup carrot, cut into small pieces
- 1 juiced orange
- 1/2 cup finely chopped parsley
- 1/4 tsp salt
- 1/4 cup olive oil
- 1/4 tsp cumin
- 1/4 cup lime juice
Step 1: Make the dressing
To make the dressing, put 1/2 cup cilantro, lime juice, orange juice, cumin, olive oil, jalapeno, garlic, and salt in a food processor and process until well-blended.
Step 2: Dress the vegetables
Pour the dressing over the vegetables in a large bowl. Mix well and refrigerate before serving.

4. Stuffed Chicken Thighs
- 6 bone-in and with skin chicken thighs
- 1 cup of almond flour
- 227 g breakfast sausage
- 2 eggs
- 1/2 cup shredded cheddar cheese
- 1 tsp Italian seasoning
- 2 Tbsp melted butter
- 1/2 cup Parmesan cheese
- 1 tsp crushed garlic
- pinch of salt and paprika
Step 1: Preheat the oven
Preheat the oven to 350°F.
Step 2: Prepare the stuffing
In a large bowl, beat the eggs with a fork. Add the almond flour, sausage, garlic, cheeses, melted butter, and Italian seasoning.
Using your hands, mix the ingredients well, and divide it into six sections.
Step 3: Stuff the chicken
Fill the chicken by pulling back the skin of each thigh and stuffing it with the sausage mixture.
Step 4: Bake!
Spray the baking dish with cooking oil. Place the thighs in it.
Spray them with cooking oil as well — season with salt and paprika.
Bake for 30 minutes and baste the chicken with the juices. Put it back in the oven and cook for another 15 minutes.

- 5-6 kg whole turkey giblets
- 6 fresh sage leaves
- 5 medium carrots, sliced into 2-inch pieces
- 4 celery ribs, sliced into 2-inch pieces
- 5 fresh thyme sprigs
- 2 fresh rosemary sprigs
- 3 wedge-cut medium onions
- 1 halved lemon
- 4 cups low-sodium chicken broth
Garlic Herb Butter
- 3/4 cup unsalted butter
- 1 1/2 Tbsp chopped fresh sage
- 1 Tbsp chopped fresh parsley
- 2-3 tsp sea salt
- 1 1/2 Tbsp chopped fresh rosemary
- 5 minced garlic cloves
- 1 1/2 Tbsp chopped fresh thyme leaves
- 1 tsp black pepper
Step 1: Defrost the turkey
Defrost the turkey. Before proceeding with this dish, make sure that the turkey’s neck is removed, rinsed well, and patted dry.
Step 2: Preheat the oven
Preheat your oven to 425°F and place the rack on the lower third of the oven.
Step 3: Make the garlic herb butter
Add the butter, parsley, sage, thyme, rosemary, garlic, salt and pepper in a medium bowl. Stir until all ingredients are well-combined and the mixture becomes smooth.
Step 4: Butter the turkey
Carefully loosen the skin of the turkey using your hands. Using your hands and fingers, rub half of the butter under the turkey skin.
Place two thyme sprigs and three sage leaves under the skin. Tuck the wings of the turkey underneath and tie its legs together.
Step 5: Stuff the turkey
Stuff the turkey’s cavity with celery, carrots, onions, one rosemary sprig, two thyme sprigs, two sage leaves, and lemon halves. Brush it with the remaining butter.
Transfer it to a large roasting pan, breast side up. Arrange the remaining herbs, celery, and carrots around the turkey in the pan.
Add the chicken broth.
Step 6: Cook!
Put the roasting pan in the oven and cook for 45 minutes. Reduce the temperature to 350°F and continue to roast for about 2-2 1/2 hours depending on your oven, basting it with drippings and broth every 30 minutes.
Cover the turkey with foil if you notice the browning too quickly. Remove from the oven and transfer to a baking sheet.
Let it rest for 15 minutes before carving, discarding the veggies. You can reserve the pan juices for making a gravy if you want.
