Lemon Baked Cod
Ingredients:
- 16 ounces of cod fillets
- 1 Tbsp. lemon juice
- 4 slices of lemon
- ¼ cup butter, melted
- 1 Tbsp. parsley, chopped
- 1 tsp garlic, minced
- ½ tsp salt
- ½ tsp pepper
Directions:
Step 1: Preheat the Oven
Preheat the oven to 400 degrees Fahrenheit. Then pick a large baking dish and line it with a baking sheet or non-stick spray.
Step 2: Prepare the Cod Fillets
In the meantime, wash the cod fillets and dry them with paper towels. Remove any bones. For smaller pieces, cut the fillet into bite-size. Cod’s amino acid profile and high protein content help with weight loss and regulating the metabolism.

Step 1: Boil the Garlic and Cauliflower
Fill a large pot with salted water and let it boil. Then add the cauliflower and garlic and let it sit in the boiling water for 10 minutes. Use a fork to check if its tender. Once done, drain it and leave the cauliflower and garlic in the pot for 2-3 minutes.
Step 2: Mash the Cauliflower
Put the garlic and cauliflower in a food processor. Add the pepper, salt, and olive oil and purée until smooth. A hand blender and potato masher can also be used if there is no food processor available.
Step 3: Garnish the Dish
Add some chopped thyme into the mashed cauliflower to garnish. Add more flavor by adding some salt, pepper, and olive oil.
Step 4: Serve Hot
